Any thoughts on what happened between these two?
We've picked up that they dated, and there was a july 4th weekend, and he suddenly ran off... I don't think we ever heard any more about this? Any thoughts?

We will never know.
Vince Gilligan said on Talking Bad that he does not trust Walt's accusations towards G&E. Therefore, my guess is that the writers dont have a thought-thru story about Gray Matter. OR, that it had something to do with Walt's pride, but not something that was ill-intentioned, purposefully done by Gretchen or Elliot. Does this make sense?
They should pick up the suggestions we made here in this forum for the bonus material on the BluRay box: Walter overhears Gretchen's brothers (or father) trying to talk her out of that relationship with Walt, who will never accomplish anything meaningful in life as they say. Gretchen's reaction to that could be silent, so that Walt doesn't notice she (kind of) defends him, and therefor he's under the (wrong) impression that she didn't stand by him when she should have, which was his reason leaving that place. And yeah, icing on top of that would be him buying his famous Heisenberg hat right after that. :)
Is the purchase of the hat in bonus material? I just watched seasons1-3 but can't remember him buying the hat? Was it before he met with Badger and the boys at the science museum?
In my suggestion, yes. In reality I don't know.
He already had it (and the sunglasses) on the junkyard in A No-Rough-Stuff-Type Deal but wasn't wearing them when he blew up Tuco's place at the end of Crazy Handful of Nothin'.
I found this though not sure if you all have seen it. It does explain their relationship and why Walt left her. http://blogs.amctv.com/breaking-bad/2009/05/jessica-hecht-interview/
A: Oh man, he’s a good actor. But it was easy because Vince Gilligan told us exactly what went down between the characters off screen: We were very much in love and we were to get married. And he came home and met my family, and I come from this really successful, wealthy family, and that knocks him on his side. He couldn’t deal with this inferiority he felt — this lack of connection to privilege. It made him terrified, and he literally just left me, and I was devastated. Walt is fighting his way out of going back to that emotional place, so he says, “F— you.”
As a writer, I know very well what happened between Walt and Gretchen, and I know why the writers never told anyone. The problem was that Walt was not Jewish. Her father and brothers got Walt alone, away from Gretchen, and made sure he dropped all ideas of marrying her. Then, according to their plan for her, she married a wealthy, successful Jewish man... Elliott Schwartz.
Her family may not have used the direct method of just "telling" Walt he couldn't marry her; they may have used more surreptitious, manipulative tactics, like understanding his insecurites, and what buttons they could push to make him think leaving her was his own idea.
his pride. thats why. walt and gretchan were in love and while on a trip with her and her father and brothers walt overheard a convo in which grethcan's dad insulted him. this wounded his pride, so he left and sold his share just to get away from them. if walter wasn't a prideful piece of shit his life would have beenn much better :)
