We've picked up that they dated, and there was a july 4th weekend, and he suddenly ran off... I don't think we ever heard any more about this? Any thoughts?

We will never know.
Vince Gilligan said on Talking Bad that he does not trust Walt's accusations towards G&E. Therefore, my guess is that the writers dont have a thought-thru story about Gray Matter. OR, that it had something to do with Walt's pride, but not something that was ill-intentioned, purposefully done by Gretchen or Elliot. Does this make sense?
They should pick up the suggestions we made here in this forum for the bonus material on the BluRay box: Walter overhears Gretchen's brothers (or father) trying to talk her out of that relationship with Walt, who will never accomplish anything meaningful in life as they say. Gretchen's reaction to that could be silent, so that Walt doesn't notice she (kind of) defends him, and therefor he's under the (wrong) impression that she didn't stand by him when she should have, which was his reason leaving that place. And yeah, icing on top of that would be him buying his famous Heisenberg hat right after that. :)
Is the purchase of the hat in bonus material? I just watched seasons1-3 but can't remember him buying the hat? Was it before he met with Badger and the boys at the science museum?
In my suggestion, yes. In reality I don't know.
He already had it (and the sunglasses) on the junkyard in A No-Rough-Stuff-Type Deal but wasn't wearing them when he blew up Tuco's place at the end of Crazy Handful of Nothin'.
